Warming Spiced Golden Smoothie Bowl
This is the perfect concoction for those of you that love their smoothies but don;t feel like having anything cold during winter months.
This bowl of goodness will keep you warm while delivering a concentrated dose of plant medicine! Antioxidants, vitamin A and C, fibre from the pumpkin and carrots; anti-inflammatory properties from the turmeric blend, spices and mushroom elixir that also supports the immune system function and a good dose of plant based protein.
You could also use sweet potatoes (not orange and purple) instead of pumpkin, switch the spices with the ones you like the most, add cacao powder, use tahini or your favourite nut butter in place of the plant based milk like I did and top with granola, coconut chips, cacao nibs or even more nut butter! Try it out!
Ingredients:
1 1/2 cup of coconut/hemp/almond or cashew milk (I made mine blending @mindfulbitesuk almond maca nut butter with warm water)
1 cup of steamed or posted pumpkin/butternut squash
1 big or 2 small carrots, either raw or steamed
1 tbsp of @wunderworkshop golden latte blend
1 1/2tsp of cinnamon powder
1 tsp of cardamom powder
1/2 tsp of anise powder
2 scoops of @formnutrition vanilla protein
1 tsp vanilla powder
1 tsp of @foursigmatic cordyceps elixir
Place the milk in a blender or food processor and add the rest of the ingredients.
Blend until smooth and fluffy.
Pour into your favourite serving bowl and decorate with your favourite toppings. Stewed apples and pears would be perfect here as well as a drizzle of nut butter or tahini and a dollop of coconut or almond yogurt. I topped mine with pear heart and a drizzle of caramel sauce. Enjoy!
